Vegan Edamame Mango Salad

It's the middle of S U M M E R !!


It's been a minute since I have been on here sharing all the goods.

How are y'all? I am hoping you are soaking up everything summer time. Soon we'll be back to schedules and sports and holiday's. Be present. Soak it in.


I have the most yummy summer salad called Edamame Mango Salad. It's the perfect salad to bring on a picnic or to the pool. I added avocado and lime to this recipe. You may need to make a few adjustments too, to make it just right. I LOVE it.




INGREDIENTS:

1 tbsp basil chopped

1 can black beans drained and rinsed

1 can corn drained

1 cucumber diced

2 cups of cooked edamame

3 garlic cloves chopped

3 mangos cut into bite size pieces

1/2 red onion chopped

2 lemon juiced

1/2 tsp red wine vinegar


INSTRUCTIONS:

Mix and eat! Add avocado if ya want. I also added the juice of 1 lime.


SO GOOD!! Happy Summer Time.
