Cauliflower Taco Bowls
These bowls are so good! My kids liked them too, I did add some grilled nuggets in to their bowls for a little extra protein. I also used a brown rice and quinoa mix instead of just the rice. You could really use any kind of grain. We are trying to eat as clean as we can. I hope you enjoy. Please let me know what you think if you try it.
Ingredient list:
1 head of cauliflower
1 red bell pepper
1 red onion
2 cups of cooked brown rice
1 can of black beans
1 can 4 oz of green chilis
lettuce
2 tsp olive oil
4 tbsp taco seasoning
1 avocado
cilantro
salsa
Instructions:
*Preheat oven to 425 and line a baking sheet with parchment paper.
Roughly chop 1 head of cauliflower, red bell pepper, and red onion.
mix with 1 tbsp of olive oil and 2 tbsp of taco seasoning.
cook for 30 min.
While that is going, in a sauce pan heat up-
2 cups of (cooked) brown rice
1 can of black beans, rinsed
1 4oz can of green chilis
2 tbsp of taco seasoning
To assemble-
Lettuce at the bottom of your bowl
add the rice mixture and then the cauliflower mixture
top with chopped advocado, salsa, cilantro, and drizzle with ranch dressing. We use Tessemae non dairy ranch. They are so good and you can find it in the produce section of your grocery store.
