Gluten Free Dairy Free Banana Bread
I know the Holiday's are right around the corner and we are all ready to get in the spirit. Baking all the goodies spirit, that is. Since our house is pretty much a gluten and dairy free zone, I have been dying to find something to brag about. This is the best recipe I have found for gluten and dairy free friends.
Here is what ya need:
1/3 cup of EVOO
1/2 cup of maple syrup
3 ripe bananas, mash them babies-i use my hands ;)
2 eggs
1/3 cup of any plant based milk, I used almond milk
1 tsp of baking soda
1 tsp of vanilla
1/2 tsp of salt
1/2 tsp of Saigon or regular cinnamon
1 and 3/4 gluten free baking flour, I use Red Mill.
Instructions:
preheat the oven to 350 and grease your loaf pan. (9X5)
Mix the oil and maple syrup, then add the ripe bananas, eggs, and milk. Whisk together.
Add baking soda, vanilla, salt, cinnamon. Mix.
Last, slowly add the flour and mix. At this point you can fold in any nuts or chocolate chips, if that's your thing.
Pour into your greased loaf pan and bake for 1 hour, may take a few minutes longer. Test with a toothpick.
