Meatless Dinner Everyone will LOVE!
Y'all, this is my favorite lunch or dinner at the moment. My whole family loves them. These cauliflower buffalo tacos are fun and full of flavor. I hope you'll give this recipe a shot. I usually end up roasting a lot of cauliflower for the week to save a step in the evenings when we are working on homework and running kids to activities. These are Vegetarian, but even if you aren't, it is still ok and even good for you to cut meat out, occasionally. You don't need as much meat as you may think. Veggies like spinach, kale, edamame, cauliflower, avocado, and asparagus, (along with so many more), have plenty of protein. I like to use Siete brand almond flour tortillas which also has protein.
INGREDIENTS:
1 head of cauliflower
buffalo sauce
spinach
avocado
siete almond flour tortillas
tessemae dairy free ranch dressing
Chop cauliflower, coat in evoo, add a bit of salt, and roast in the oven on 425 for about 20 min. Toss in sauce to desired coating. Heat up your tortillas. Assemble your tacos and drizzle with dressing. Sweet Jesus, enjoy the heck out of these. Let me know what ya think!
