Sticky Sesame Chickpea

THIS! I think this is my hubby's favorite vegan dish I make at the moment. It is good, y'all! It's easy too. Definitely try it before you judge it. I think its really all in the sauce. I typically make this and add some grilled chicken for my kids or some type of meat but my hubs and I just have this. Please let me know it you try it.



RECIPE-


Ingredients:


1 1/2 toasted sesame oil

2 cans chickpeas -drained and rinsed

2 tsp rice vinegar

1/3 cup tamari or coconut aminos (subs for soy sauce)

3 tbs maple-syrup

4 tbs vegetable broth or water divided

3 garlic cloves chopped

1/3 tsp ground ginger

1 tbs olive oil

1 tbs arrow root powder


Cooked brown rice or quinoa.


2 cups of steamed broccoli


Instructions:


Saute garlic in olive oil for a few minutes


In a small bowl mix arrow root powder and 2 tbs of veg broth or water till no clumps, set aside


To the sauté pan with garlic add tamari or coconut aminos, toasted sesame oil, maple, syrup, rice vinegar, ginger, and 2 more tbs of veg broth. whisk together over medium heat.


Add arrowroot mixture and stir. When bubbles begin to form add chickpeas and stir till the are coated.


Cook on low heat for a few minutes until the chickpeas are warm.


Create your bowl - start with rice or quinoa, add your yummy chickpeas, and top with broccoli.
