California Quinoa Salad




Spring time is HERE! I hope. We had the craziest weather here in TX. First, we froze, then we started sweating. Mosquitos came out, then left. Y'all, crazy town.


So, because I am praying it's Spring time, I made an amazing little dish. My hubby and I eat it as a main dish but my teens see it more as a side dish. Go figure! It's light and yummy and reminds me of spring time! I hope you love it!


Ingredients:


1 c. of quinoa (or rice)

1/4 c. balsamic vinegar

peel and dice 1 mango

1 red bell pepper chopped

1 c. shelled edamame

1/4 c. chopped purple onion

1/4 c. unsweetened coconut flakes

1/4 c. sliced almonds

1/4 c. raisins

2 tbs chopped fresh cilantro

lime zest


Directions:


Coook quinoa or rice

Whisk together balsamic and lime zest, set aside

In a bowl combine all ingredients

Pour balsamic on top and serve asap.


Should make about 4 servings!
