Kale Power Salad

Ya know what I love? Learning about how food heals and cares for our bodies. I get excited to make healthy food for my friends and family. It makes me proud, like I am helping them! It's also like art! All the colors and textures, it's recently become a hobby, I guess - using weird ingredients and learning how and why they help the body.

Here is this Kale Power Salad! LOADED with the best, healthiest ingredients. I am not going to geek out on all of you and tell you what each and everything in this bowl does but I hope you trust me! IT.IS.GOOD!! and good for ya!!

Ingredient List:

A bunch of kale (around 8 cups)

2 medium sweet potatoes diced

olive oil



2 lemons juiced

1 can of chickpeas drained and rinsed

1 avocado

dried cranberries

slivered almonds

chopped red onion

2 tbsp tahini

Let"s do this!


Preheat ove to 400

Roast diced sweet potatoes with a tsp of olive oil and salt and pepper.

While this is roasting you can assemble salads -

handful of kale, 1/3 c dried cranberries, 1/3 c chickpeas, 1/3 cup of slivered almonds, tbsp chopped red onion, 1/4 avocado. Squeeze 1/2 lemon juice on salad and a tsp of olive oil. (this is for 1 salad, you could make 3-4 with these ingredients.)

When the sweet potatoes are done, add 1/3 cup of those.

Tahini dressing - juice of 1 lemon and 1/4 - 1/3 cup of tahini. whisk. Add warm water to get desired consistency. Drizzle on salad. mm mm
