Thai Cucumber Shrimp Salad


I made this recently for my hubby and I. It is so light and crunchy! A really good, healthy, summery, kind of meal. I have been on a bit of a health kick lately. I think being home a lot and cooking and eating all the things started making me feel a bit gross and when I pulled out those summer shorts...Yowza. What happened?? So, it was time for a shift! I started a little health and fitness challenge. I am constantly finding fun recipes for our family. I will be making this again for sure.



Salad Ingredients:

1 lb med. cooked shrimp

2 cucumbers sliced

1/2 cup of cilantro

2 green onions sliced

1 chopped green bell pepper


Dressing Ingredients:

3 minced garlic cloves

1/2 chopped Serrano chilli pepper

1/4 cup of lime juice

1/4 cup of rice wine vinegar

1 tbs sesame oil

2 tsp of fish sauce (optional)

1/2 tsp salt

1/2 tsp red pepper flakes

1 tsp sesame seeds

8 mint leaves chopped


Throw all the salad ingredients in a cute bowl, must be cute.

Mix dressing ingredients well and pour over salad.

I left the fish sauce out since my hubby is not a fan, but I added a little to mine cause I love it, and it was delish!!!! Either way, this salad is my new favorite!
