Watermelon Cucumber SUMMER Salad

I could eat this salad ALL summer! It is light, refreshing, tangy, and SO easy to make. There are a few options for seasoning but you should try a few until you get it just right.

Here is what ya need-

2 cups of watermelon - cubed

1 cup of cucumber - chopped

1 handful of mint - chopped

Juice of 1 lime

AND the FUN part- seasoning .... Your choice to sprinkle chili powder, tajin, or sea salt. I have even splashed a little balsamic vinegar in it.


Honestly anything else you wanna try, go for it. It's fun to play with your food.

The health benefits of watermelon, cucumber, and mint are really good.

W A T E R M E L O N - is mostly water. Hydrate up!! It also has vitamin A,B6, and also C. It's full of antioxidants, amino acids, and lycopene (good for your heart and bones).

C U C U M B E R - full of all the goodness. Loads of vitamin C, K, magnesium, and potassium. Promotes hydration, (great for summer time). Helps in weight loss too.

M I N T - These leaves will boost your immune system, help with acne, help with stomach issues too. (and so much more)
